One of my hubby’s favorite side dishes is french fries (obviously because we got him a fryer for his birthday), so I have been thinking outside of the french fry bag, and I came up with this little bunch of potatoes. They are quick and easy to put together, just perfect for a weeknight meal.
Wash the potatoes, and then dry them.
I used a mandolin to slice my potatoes evenly, if you don’t have a mandolin handy…not to worry. The solution…use a knife and cut evenly. Everything needs to be cut even for baking, so one slice doesn’t burn and the other slice is under cooked. It’s very important.
Look at those beautiful slices! On the mandolin I used the thickest it would go, #3. I tried doing them thinner in the past, and hubby was just not impressed…I must say that I wasn’t either. So not too thick, but not too thin, you want them just right. This is how Goldilocks would have wanted them lol!
I put all my sliced potatoes into a bowl and threw in all my seasoning…threw/dumped/sprinkled…does it really matter?
Mix it all together, yes with your hands, and yes it’s going to be very messy. That’s ok, because you can wash your hands, just not yet.
Place them all on a foiled baking sheet, giving each slice some room. In other words not touching other slices. After half way through flip the potatoes so they can cook on both sides.
Once cooked on both sides, place them all together, some may overlap during this process.
Cover the potato bunch with shredded cheese, at this point if you have some cooked bacon, add that on top. It really gives it an extra pop of flavor, and also it’s bacon…you just can’t go wrong with bacon. I added a little extra Mrs. Dash on the top of the cheese and then pop in the oven until the cheese is melted.
TADA! Now serve this on the side of your main dish and enjoy. If you would like to add some green to this, chop up some green onion and sprinkle on top…it may not be any healthier, but it will look healthier. lol
