Making these itty bitty cherry pies are easy and perfect for a huge group of people! I used this recipe, Secret Pie Crust, for the pie crust, click here to find it. It has the perfect secret addition for a sweet dessert.
Pull the Secret Pie Crust out of the freezer, or fridge, wherever you decided to chill it, and roll it out. Remember you don’t want to work too much on this dough, keeping the butter cold is what makes the crust flaky while cooking. So work efficiently with the pie crust.
Use a 2 inch circle hole punch. I did not have a 2 inch circle hole punch, but I did however have a lid on one of my seasonings that was 2 inches. I washed the lid, and it worked out perfect. Also saved me some money, because I didn’t have to go out and buy one. Oh so perfect!
Place the dough over the mini cupcake tin, push it down and press up on the sides to fill the cupcake tin.
Fill with cherry pie filling, and use part of the crust to cut out stars, or whatever design you want. I used stars for the 4th of July. Also you could use any pie filling to fill these up, and I’m pretty sure it would turn out perfect!
Bake them, and let them cool. I’m holding this cute little pie in my hand to show you how small it is, but don’t let the size fool you, this pie has amazing flavor for being so little!
