Happy national pancake day! I love today, usually I go to IHOP and get a free stack of pancakes. But mine end up not being free because well I enjoy fruit and toppings on my pancakes. Today instead of going to IHOP, I made myself some delicious pancakes. They are not healthy; I will go ahead and tell you that, but they do have protein. Since they have protein I call these good for me pancakes, just kidding I call them Protein Cinnamon Roll Pancakes. I was on facebook and one of the recipe videos popped up, and Bobby Flay had made these cinnamon roll pancakes. You guys, I was drooling watching his video, those pancakes looked so good. I knew I had to try and do them on my own. Pretty sure I succeeded , the hubby even liked these, and he’s not that much into sweets.
To start off, let’s do the cinnamon swirl. Set out one stick of butter and two ounces of cream cheese, and get them to room temperature. Cream together butter, brown sugar, and cinnamon. Scoop into a zip lock baggie. I then place it into the freezer to firm up a bit, but you can place it in the fridge. Both are perfectly acceptable, just don’t freeze it solid.
To make the glaze, cream together the butter, cream cheese, powdered sugar, and vanilla extract. I’m not a huge fan of cream cheese, unless were talking about cinnamon rolls, then definitely sign me up!
The batter is the easiest to put together, place the Kodiak mixture and water into a bowl, and mix together. If you don’t have Kodiak pancake mix, no need to worry, you can use any pancake mix or use your own recipe. The only thing is, your pancakes will not have as much protein.
Put a non stick skillet on med-high heat, and add some of the batter and cook for about three minutes. When bubbles start to form in the middle of the pancake add the cinnamon swirl. Then flip the pancake and cook for about one to two minutes.
Look at that deliciousness, now we just need to dress it all up with more sweetness!

The almost finished product…perfect! After assembling the other pancakes on top enjoy them right away; I highly recommend it!
