Today we are making smoothies. I know there isn’t any baking to this (unless you toast the pecans in the oven), but summer is here and a cool treat on a hot summer day is needed. So grab whatever fruit and if you want veggies that you have laying around the kitchen. (In my daily smoothies I add frozen spinach, probably about 1/4 to 1/2 cup. You can’t taste it, but you get all the extra nutrients.)
Top: Pineapple, kiwi, pomegranate, bananas, & coconut.
Bottom: Protein Powder, matcha powder, toasted pecans, chia seeds, & unsweetened coconut shavings.
Pineapple: Cut the top off and scoop the filling out with an ice cream scoop, making yourself a nice big hole. This is going to be your cup.
Kiwi: Cut top off, then take a spoon and insert it in as close to the skin as possible, and slide the spoon around, the kiwi should easily fall out. (Mine did not do that, but I have seen it done on youtube lol!)
Pomegranate: Cut the top off, and where you see the white stuff aka the pith, cut it down and it should open like this. Supposedly this is the easiest way to do it…I still struggled to get them out, and I had pomegranate juice all over my kitchen, so be careful with this one.
Banana: Peel back the banana and cut into slices. I froze half of the banana to help make the smoothie smooth, and cold!
Coconut: Take a hammer, hold the coconut in your hand, and gently hammer around the coconut in the middle. I bought two coconuts incase one didn’t work out, but this happened to work out perfect! YAY! I held it over a bowl to collect the coconut water. I got more than one cup of water from this coconut! And now I also have two smoothie bowls!
Now we take out my second favorite kitchen tool…the Ninja! Everything is prepped and ready to be made into a smoothie!
Add in whatever you want. Here I added one cup of cold coconut water with crushed up pomegranates, 1/2 cup frozen raspberries, and 1/2 frozen sliced bananas.
Fill the “bowls” and “cup” with the smoothie mix. And then top with whatever you want!
I topped my bowls with sliced bananas, sliced kiwis, pomegranates, coconut shavings, and chia seeds.
I filled my cup up, and topped with coconut shavings, and the top of the pineapple, then added a straw. Is that not cute?!?
Once completed quickly grab your friends to enjoy this cool summer treat.
P.S. I struggled trying to keep those coconuts sitting the right way and holding everything in them. Spoons were my best friends at this point. Real friends would have been a lot more help…especially while taking pictures. lol
