Starting the day off right, breakfast at it’s finest! The inspiration for these waffles came from IHOP, they have these pancakes with the white chocolate chips cooked inside, and raspberries topping it off. Also they serve it with a sweet cream cheese on top to make it look beautiful. So I decided I wanted to make this healthier, and easy to to fix for fast furious mornings. Because we can always use a little help on those mornings.
The pancake/waffle mix I used was Kodiak Cakes Power Waffle Mix. It provides the extra protein needed to make it to the next meal of the day.
By adding in the eggs, and the milk, it provides even more protein and energy to get through that crazy morning. The cinnamon and vanilla create those amazing breakfast smells…let’s be serious those are smells for any time of the day!
Throwing in the white chocolate chips gives this batter the little bit of sweetness that I believe it needs.
The raspberries add the tartness that pairs nicely with white chocolate chips, don’t forget about the benefits of those raspberries, lots of vitamin C, and getting in some of the fruit needed for the day.
Place about 1/4 cup of the batter in the waffle iron, I use this one, Cuisinart WMR-CA Round Classic Waffle Maker
I cooked mine for about 4 minutes, not underdone and not burnt. It’s the perfect light golden brown!
For this step please do as I say, and not as I did. lol The white beautiful topping that is supposed to be yogurt, is actually white chocolate, melted, and perfectly drizzled on the waffle. Because of all the sugar that is now on this waffle I did not add any maple syrup. Definitely not needed if the white chocolate is melted all on top. FOR THE HEALTHY WAFFLE USE YOGURT, any yogurt of choice.
Usually when making the waffles I’m meal prepping, so this is where it comes in handy to have these for those busy mornings. After the waffles are cooked I place them on wire racks to cool completely.
After they have cooled I break them or cut them in half and place in baggies, being sure to take as much air out of the bag as possible. Place all bags in the freezer. When a fast breakfast is needed, that will be filled of all good things, heat the waffles up in the toaster. They will come out nice, toasty, hot, and crunchy. Top with the raspberries, yogurt, and pure maple syrup, enjoy the super easy breakfast, and go about your day as planned…or maybe not so planned.
